Why a cup is not always a cup
The word 'cup' hides a real ambiguity. A US customary cup is 236.6 mL, a US 'legal' cup used on nutrition labels is 240 mL, a metric cup (common in Australia, New Zealand, and much of Europe) is 250 mL, and an old imperial cup was 284 mL. The gaps are small for one cup but compound in a recipe scaled up several times, and they can matter for baking, where ratios are precise.
Tablespoons vary too: the standard is 15 mL, but Australia uses a 20 mL tablespoon. This calculator uses US customary measures throughout, which is what most online recipes assume. If a recipe is clearly from another country, check which cup it means before trusting a conversion.
Volume and weight are not interchangeable
The biggest limitation of any cup-based measure is that volume does not tell you weight, and the two only match for water. A cup of all-purpose flour weighs about 120–125 grams; a cup of granulated sugar weighs about 200 grams; a cup of honey weighs around 340 grams. Converting a cup of one to a weight of another is meaningless without knowing the ingredient's density.
This is why serious bakers weigh ingredients in grams rather than measuring by cup. Flour especially is troublesome — scooping it packs it down, so two cups measured by different people can differ by 20% in weight. When precision matters, a kitchen scale beats any volume conversion, and the best recipes give weights for exactly this reason.
Oven temperatures and gas marks
Oven temperature is a separate conversion from volume, running across three scales. Celsius and Fahrenheit are linked by the usual formula, °F = °C × 9/5 + 32. The British gas mark is a coarser scale where each mark is roughly 25 °F (about 14 °C) apart — gas mark 4 is the everyday 350 °F or 180 °C, the 'moderate' oven most recipes assume.
One practical wrinkle: fan (convection) ovens run hotter than conventional ones at the same setting, because the moving air transfers heat more efficiently. The common rule is to reduce a conventional recipe temperature by about 20 °C, or one gas mark, when using a fan oven — or reduce the time instead.
