A brew ratio expresses how many parts of water go to one part of ground coffee, by weight. A 1:16 ratio means 16 grams of water for every gram of coffee, so the amount of coffee is simply the water divided by the ratio. Weight is used rather than volume because ground coffee's density varies with the bean, roast, and grind — a scoop can hold quite different masses — while a scale removes that variability entirely. Water is convenient here because one millilitre weighs almost exactly one gram, so a recipe in grams can be measured with a jug. The 'golden ratio' of roughly 1:15 to 1:18 produces a balanced cup for most brewing methods; a lower ratio makes a stronger, more concentrated brew and a higher one a milder cup.

Why ratio beats scoops

The reason two people following the same recipe get different coffee usually comes down to measurement. A 'scoop' or 'tablespoon' of ground coffee is a volume, and the mass it holds depends on the roast, the grind size, and even how the grounds settled — a fluffy light roast and a dense dark one can differ by a third in weight for the same scoop. Brewing by a weight ratio eliminates this, because you are measuring the actual amount of coffee and water rather than an unreliable proxy.

A small kitchen scale is therefore the most cost-effective upgrade a home brewer can make, more impactful than a fancier machine. Weigh the coffee, weigh (or measure by volume, since water is one gram per millilitre) the water, and every brew becomes repeatable. Once a ratio tastes right, you can reproduce it exactly and scale it up or down for any batch size, which is precisely what this calculator automates.

Choosing a ratio for strength and method

The brew ratio is the main dial for strength. A lower number — more coffee per unit of water, like 1:14 — yields a stronger, more intense cup; a higher number like 1:18 gives a lighter, more delicate one. The widely cited 'golden ratio' of about 1:15 to 1:18 is where most people find balance, but taste is personal and there is no wrong answer, only preference. Start in that band and adjust a point or two until it suits you.

Method also shapes the ideal ratio. Pour-over and drip brewing sit comfortably in the golden range. Full-immersion methods like the French press are often brewed a touch stronger. Espresso is a different world entirely, using ratios around 1:2 because it is a concentrate, not a full cup. Cold brew goes the other way, using very high coffee doses (around 1:8) that are later diluted. The ratio you pick should match both your palate and the way you brew.

The other variables the ratio can't fix

A correct ratio gets you most of the way to good coffee, but it is not the only factor. Grind size controls how fast water extracts flavour: too coarse and the brew is weak and sour from under-extraction; too fine and it turns bitter from over-extraction, even at a perfect ratio. Grind should be matched to the method — coarse for French press, medium for drip, fine for espresso — and adjusted by taste.

Water temperature and brew time round out the picture. Water just off the boil, around 90–96°C, extracts well; cooler water under-extracts. Time interacts with grind and method, from a few minutes for pour-over to many hours for cold brew. Water quality matters too, since coffee is almost entirely water and heavily mineral or chlorinated tap water tastes through. The ratio gives you a reliable foundation; dialling in grind, temperature, and time on top of it is where a good cup becomes a great one.
